1/2 cup finely ground almond flour
1/4 cup cacao powder
1 tsp baking soda
Sea salt to taste
1/4 cup melted coconut oil
1/4 cup creamy peanut butter (or chunky)
1/2 cup pure maple syrup
1 cup vegan dark chocolate chunks
Extra peanut butter for swirl topping
Preheat oven to 350 degrees farenheit. Prepare an 8×8 baking pan with parchment paper and set aside. Using a hand blender, blend coconut oil, peanut butter, egg and maple syrup until well combined.
Mix in the almond flour, cacao, baking soda and sea salt. Stir until batter is formed, making sure cacao powder is dispersed well.
Fold in the chocolate chunks then pour into the parchment lined baking pan.
Swirl in the extra peanut butter and top with sea salt + extra chocolate chunks.
Bake in the oven for 20-22 minutes. Let cool in the pan for 10 minutes.
Slice into 12 bars and enjoy!
